Is There A Slimming World Recipe For Lamb Hotpot ?

Hi there,

I've adapted this recipe for you, sin values depend on whether your on Red, Green or Extra Easy

Ingredients

Diced lean lamb (instead of lamb chops)

Fry Light (replacing oil)

1 onion , finely sliced

450g potatoes , peeled and thinly sliced

2 carrots , peeled and thinly sliced

1 pack parsley , chopped

650ml chicken stock

Freshly ground salt and pepper

Method

Heat the oven to 180C/fan 160C/gas 4. Brown the diced lamb really well in the Fry Light. Set aside and fry the onions in Fry Light until tender. Layer the lamb, onions, potatoes and carrots in a large casserole, sprinkling parsley and seasoning as you go, saving enough potato to finish with a thin layer on top. Pour in the stock and cover and cook for 1 hour.

Take off the lid and cook for a further 30 minutes.

The top might not be golden at the end as the original recipe dabs butter on the top to crips and brown it.

Sin values:

Chicken oxo for stock 0.5 green and red days

Lamb on green day 2 sins for 28g (lean roasted without fat)

Potatoes on red day 1 sin for 28g
